Este plato tiene su origen de nuevo en cocina de los pescadores, que hacían en la barca. Lo preparaban según el pescado del que disponían y le añadían un majado. Freían los ajos enteros sin pelar hasta que cogían un color oscuro, de ahí su nombre «all cremat».Me gustan mucho las recetas de pescado que llevan salsas o suquets. La verdad es que intento no abusar mucho de ellas, no me conviene, así que las reservo para días especiales. Pero esta que os presento, de nuevo creo que es una receta fácil y con muy buenos resultados.
Este proyecto si de algo me está sirviendo es para ser más disciplinada en la cocina. Yo siempre he sido un poco anárquica, cocino por intuición, no suelo utilizar medidas. Añado la sal y el aceite según veo necesario. Pero ahora, tengo que controlar lo que hago, ya que quiero ofreceros las recetas lo mejor explicadas posible. Espero que así sea.
Sé que la vi en un programa de televisión, de esos que van a un restaurante y nos muestran una receta, pero no recuerdo cual era, tampoco os aseguro que sea la receta original, así es como yo la recuerdo y la verdad es que está muy, muy rica.
También es una receta que podemos preparar parte de ella con antelación, por lo que si tenemos invitados nos permite poder atenderlos y no estar todo el tiempo metidas en la cocina, no me gusta.
Por otro lado, como la salsa la hacemos a parte, nos permite abusar más o menos de ella, por lo que para mí es perfecta.

Merluza al all cremat
Ingredientes
- supremas de merluza sin espinas ni piel - 4 (unos 250 gr. cada una)
- pan del día anterior - 4 rebanadas
- aceite de oliva virgen - 100 ml
- diente de ajos - 4-5
- perejil - 1 ramita
- ñora - 1
- sal, pimienta -
- romero - 1 ramita
- vino blanco - 1 chorrito
Elaboración:
- Salpimentamos las supremas de merluza por los dos lados. Las enrollamos.
- Con papel de aluminio hacemos unas tiras largas, dobladas por dos veces. Envolvemos la merluza con las tiras y cerramos con un palillo.
- Ponemos una sartén al fuego con un chorrito de aceite, a fuego muy fuerte sellamos la merluza por los dos lados. Retiramos.
- En una bandeja para el horno colocamos la merluza, le añadimos un chorrito de aceite y otro de vino de cocinar junto con 3 c/s de agua y una ramita de romero. Metemos en el horno precalentado a 180º/200º durante 10 minutos. Retiramos y reservamos.
- En un cazo colocamos el aceite, cuando esté caliente le añadimos los ajos, el pan, la ñora y por último el perejil a trozos.
- Cuando esté todo dorado, retiramos y trituramos con el turmix.
- Pasamos la salsa por un colador, le añadimos el líquido que nos haya quedado en la bandeja del pescado, ponemos de nuevo el cazo en el fuego, rectificamos de sal si fuera necesario y dejamos reducir a fuego lento hasta tener una salsa un poco espesa.
- Retirar el papel de aluminio y los palillos del pescado, poner un poco de salsa en el plato, colocar la merluza y añadirle un poco más de salsa por encima. Servir con unas rodajas de pan frito.
Comentarios:
La merluza, lo mejor es que el pescatero nos la prepare sin espinas ni piel.
La ramita de romero, es opcional, a mi me gusta mucho el aroma que le deja al pescado, pero si no os gusta no es necesario.
Los ajos, una vez pelados y antes de freírlos le quitamos el nervio del centro, eso evitará que se nos repita.
Como os he dicho antes, la salsa la podemos preparar incluso el día antes y el mismo día sólo calentar.
